Champagne Real Food Tulsa Style Anyone?







The most wonderful thing happened to me the other day. I won a prize! Not just any old prize, oh no my friend, the amazing Penni Shelton of Raw Food Tulsa gifted me with her superb new RawSolutions e book



I have to tell you, get your heiney over there and spend five bucks on this gem, it is so wonderful and full of great recipes and tips! Thanks so much Penni!


I got inspired to make Penni's Champagne Vinagrette and her orange avocado mixed greens salad, both from Rawsolutions.
Here are the raw materials for the dressing:

For the Champagne Vinagrette, so simple, yet so yummy! I doubled the amount of shallot called for so it came out very zesty and a lovely shade too..

This whipped up so quickly, then I dumped my spring mix and sunflower sprouts in the bowl..

added a tangerine (sub for the orange) and a nice organic Hass Avocado, the dressing and some hemp seeds and VIOLA' dinner is served!
